It uses a degenerate gas of strontium 87, a fermionic isotope of strontium, loaded in a spin-dependent optical lattice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The first section covers the experimental stages leading to that, and, in particular, the narrow-line MOT and the evaporative cooling in a crossed dipole trap, resulting in a strontium 87 Fermi sea with T\/T<sub>F<\/sub> ~ 0.2. We also describe how, once the degenerate gas is loaded into layered, independent, square 2D optical traps, a 689 nm optical lattice creates a quasi-alternate artificial magnetic field with its spin-dependent light shift.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The rest of the manuscript presents several experimental methods that were developed around that quantum simulator. First, we detail our shelving spectroscopy scheme for the intercombination line, with a relative frequency instability of 2 \u00d7 10<sup>-12<\/sup> after 1 s (and a fundamental limit of 2\u00d710<sup>-14<\/sup>).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then, we describe how we populate, at will, between N = 1 and N = 10 spin states, and how we measure the spin-resolved momentum distribution thanks to a spin-selective, two-photons momentum transfer. This latter method solves the limitations inherent to strontium 87, whose weak Land\u00e9 factor in the ground state prevents using more widespread methods such as the Stern-Gerlach separation. Notre approche sera de pr\u00e9parer un \u00e9tat pur et s\u00e9parable de tr\u00e8s basse entropie, en manipulant de mani\u00e8re coh\u00e9rente le spin des atomes dans un r\u00e9seau optique ; puis d\u2019\u00e9tudier son \u00e9volution dynamique sous l\u2019effet des interactions entre atomes. On s\u2019int\u00e9ressera alors \u00e0 l\u2019approche de ces syst\u00e8mes quantiques isol\u00e9s vers leur \u00e9tat d\u2019\u00e9quilibre.
